Red Pepper Goat Cheese Pasta - #MeatlessMonday

I know three languages and am working on my fourth: English, French, American Sign Language, and learning Spanish.  I took Sign Language as a whim my senior year of high school.  One year.   It has been the most used language of the two that I learned while in school.

I used it when I went to college.  Our sister school was NTID (National Technical Institute for the Deaf).  Being one of sometimes 2 people in class that could sign meant I was usually paired up with a hearing impaired person.

I've used it at work in photo sales.  There was a National Park Service person who was hearing impaired that brought work in to our lab.  She brought more when she found out I could sign.

Now, I get to use it again!  We had an all hands meeting what seems like eons ago.  We had to introduce ourselves to 5 people.  Well, seeing an interpreter, I just had to introduce myself to the one person in the room that is hearing impaired.  I was rusty, but able co communicate.  About a week or so ago, L called me into her office.  "I have a personal question to ask."  "Ooookay?"  "Do you know sign language?"  Apparently, the person who is hearing impaired is new and with the new mentoring program, I'm a decent match as we would be able to communicate somewhat face to face.

I'm nervous.  Scared.  EXCITED!  I LOVE using my sign.  I "eavesdrop" when I see people signing here.  We have Galludet here.  Not that there aren't hearing impaired all across the country, but I'm only guessing there's a higher concentration in locations where they know others are and will be able to communicate without lipreading everything.

*flexes fingers*  I'll be finger spelling quite a bit until I can get back into it and hopefully learn new signs.  I'm a sponge.  Funny I say that as I have been slacking on the Spanish lessons.  I need to pick up on them.  I'm heading back to Bogota in August, I think.  Hopefully, after this trip, I won't have to be so involved in it...eventually.

I love goat cheese.  I love how it is so creamy and just completely melts over hot pasta.  The sharpness of the cheese with the sweet of the peppers is delicious in this dish.


Um...I didn't take many pics of this dish.  It's essentially boil the pasta, process the peppers, toss with the cooked pasta then add the cheese and stir until it's melted.  It's that simple.  And that tasty.

Red Pepper Goat Cheese Pasta #MeatlessMonday

Ingredients
  • 8 ounces pasta, uncooked
  • 12 ounces roasted red peppers, drained
  • 1 ounce almonds, whole
  • 1 tablespoon extra virgin olive oil
  • 4 ounces goat cheese
Cooking Directions
  1. Cook pasta according to package directions, omitting salt and oil.
  2. While pasta is cooking, combine peppers and almonds in a food processor and process until smooth.
  3. Slowly add the extra virgin olive oil and continue to pulse until thickened.
  4. Toss hot pasta with the pepper pesto and stir to thoroughly combined.
  5. Add goat cheese and stir until combined and cheese is melted.
  6. Serve with a tossed salad and some crusty bread.
