Pepper Pasta with Italian Sausage


I was dying to make this after walking around the ballpark on Friday and smelling all the great brats, sausages, and hot dogs cooking away at various vendors.  It was a big droolfest cause I love sausage!  GET YOUR MIND OUT OF THE GUTTER!  *sigh*  So immature!

ANYWAY

I love when WalMart has the Shady Brook Farms Sweet Italian Sausage on sale.  I buy them all when I see them!  They make for such a quick and tasty meal any night of the week.  Sometimes they have the brats on sale, too.

Does your grocery offer markdown meats?  In a bin?  Or in the case?  Depending on the store, there's a special section for marked down meat.  Or at least there WAS when I was growing up.  Now I just see those bright yellow or orange stickers in the case with the rest of the meat.  We used to rake in with that stuff.  Either it's something we'd cook that day or just toss it in the freezer for later.  We have a freezer almost full of the stuff.  Roasts, ground beef, sausage, pork chops, stir-fry beef, flat iron steaks.  You name it! 

Dad was KING of that shiznit.  He knew the best days to hit what stores for the good markdown meats AND the best time of day to hit it.  For me?  Sunday morning at WalMart is usually the best time.  I'm sure it's better mid week, but there's no way I'm getting my butt to a store before work.  I get up early enough as it is!  SHEESH!  A girls gotta sleep some time!

Mom?  She was queen of clothes shopping.  She would sort through racks and racks and racks of clothes to find stuff for us girls.  I DO.NOT have the patience for that.  She still does that stuff, too!  Finds great deals on linens, clothes, furniture, plants.  She's is QUEEN of frugal!  Recover this, reupholster that.  She dumpster dives!  LOVE IT! 

And cars?  She could talk a "manager" down to her price.  The story goes that one day Dad was at work and Mom called asking for the title to the car.  "Why?"  "Because I'm trading it in for the new car."  They picked me up from kindergarten in it.  I can't remember what it was, though.  Some sort of sedan I'm sure.  She actually did that twice, I think?

Both my parents were amazing at finding the best deals for the lowest price.  And this meal, my friends, is pretty darn cheap...AND TASTY! 

 Heat a nonstick skillet coated with cooking spray over medium-high heat. Add onions and peppers and saute until soft. Remove from heat and keep warm.
 

Using kitchen shears, cut the sausage into bite sized pieces and cook 5 to 7 minutes or until browned on all sides.


 Drain and puree the roasted red peppers in a food processor. 


Add spaghetti sauce, pureed peppers, cooked peppers, onions, and garlic salt. Simmer 10 to 15 minutes or until sausage is cooked through.
 
 
 
Cook pasta according to package directions omitting salt and fat. Top with sausage mixture and serve.

Ingredients
  • 1 cup onion, chopped
  • 2 cups bell peppers, thinly sliced
  • 20 ounces sweet Italian turkey sausage (Shady Brook Farms)
  • 28 ounces spaghetti sauce
  • 8 ounces roasted red peppers, drained
  • 8 ounces pasta, cooked
  • 2 teaspoons garlic salt
Cooking Directions
  1. Heat a nonstick skillet coated with cooking spray over medium-high heat. Add onions and peppers and saute until soft. Remove from heat and keep warm.
  2. Using kitchen shears, cut the sausage into bite sized pieces and cook 5 to 7 minutes or until browned on all sides.
  3. Add peppers and saute 2 to 3 minutes or until peppers are heated through.
  4. Drain and puree the roasted red peppers in a food processor. 
  5. Add spaghetti sauce, pureed peppers, cooked peppers, onions, and garlic salt. Simmer 10 to 15 minutes or until sausage is cooked through.
  6. Cook pasta according to package directions omitting salt and fat. Top with sausage mixture and serve.
