Sauteed Halibut with Romesco Sauce

I LOVE romesco sauce! If you haven't tried...you SHOULD! It's sweet, creamy, roastiness is excellent on top of everything! Well, maybe not everything, but you get the idea.

No halibut here...only cod. Worked with this recipe all the same though. It's simple. Make sure not to overcook the fish or it will be too dry. Most do because they don't think it's done enough, but it's got to be moist to make this successful. I mean, romesco's good, but not good enough to cover dry, fish jerky. I just had a simple side of boiled, buttered potatoes and some broccoli. I saved the left over sauce. It makes for a great topping to sammies, dip for veggies, toss with pasta. The uses are endless!! Okay...enough about the sauce. MAKE IT!
