1. If you get a day to stay home {and not have to go anywhere} what's on your list of things to do?
Well, if it's a day that I'm home and S isn't, then I usually clean. And bake and or cook to post lovely creations for y'all to try. If we're BOTH home, we usually hike something close. But not lately. Lately we're doing the wedding prep thing.
2. Are you a dog or cat person or neither? Do you have a pet?
I am both. Actually, I am an animal person. Or a reptile person. BUT we have a dog because S
3. Do you collect anything {or have a hobby you're passionate about}? What is it?
You mean OTHER than kitchen gadgets? I have two collections.
1 - Stephen King hardback books. Ever since I read the Eyes of the Dragon, I had been hooked on Stephen King. I have one full 7 foot bookshelf full of them. And that's not even half of what he's written. Some of those were only issues in soft back like The Green Mile. They are 7? pocket sized books, which is the only way those were initially released.
2 - Antique glass flower frogs. So much so that part of my collection is in a book about them. The top right page here is all mine. You see Dad and me here when Bonnie came to our house and photographed my extensive collection that's laid out on the dining room table. My parents started an antique glass business and my interest in these, then inexpensive, items sky rocketed. Dad still has the bidness, here, and Mom just has some of the center handled servers and a few unique items left.
4. Cabin in the mountains or house on the beach?
Cabin in the mountains on a lake? While I like going to the beach, I'm not a sun bather. I'd rather fish on water than swim in it. So, we've rented houses on lakes and houses in the mountains. Those are our ideal vacay type spots.
5. What is the best piece of life advice that you can give?
Only try to impress yourself. Don't listen to what "others" say or try to please others. In the long run, it only matters what YOU think and what YOU do. So, always remain true to yourself.

Penne Pasta Bake

Ingredients
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic
- 1 cup onions, chopped
- 3 cups mushrooms, sliced
- 28 ounces canned, diced tomatoes, drained
- 8 ounces penne pasta
- 1 cup ricotta cheese
- 1 1/2 cups part-skim mozzarella cheese
- 14 ounces spaghetti sauce, tomato basil
- Heat a large skillet over medium-high heat. Add oil and swirl to coat. Saute garlic 1 minute. Add onions and cook 2 to 3 minutes or until tender. Add mushrooms and cook until browned and juices have released.
- Pour the tomatoes into the pan and reduce heat to a low simmer. Continue cooking while pasta is prepared; stirring occasionally.
- Cook pasta according to package directions, omitting salt and fat. Drain.
- Preheat oven to 350.
- Combine cooked pasta, mushroom mixture, ricotta, 1 cup mozzarella,and spaghetti sauce in a large mixing bowl.
- Pour pasta into a 9 x 13 casserole dish coated with cooking spray.
- Bake covered for 30 minutes at 350. Remove cover, top with remaining mozzarella cheese and bake an additional 15 minutes or until cheese is bubbly and melted.
