S's Baked Barbecue Ribs


S and I doing recon this weekend on Wintergreen, VA to find a more economical place to stay the rest of the weekend after our wedding.  Since we're trying to save for a down payment on a house, it makes sense NOT to shell out $150 a night to stay at the resort.

I want to find a florist for a bouquet and boutonniere.  I want to find a bakery for a cake.  Yes.  I want a cake.  Fat chicks ALWAYS want cake!  Besides, this feels more like a real wedding than the first one.  Don't ask my why.  It just does.  SO I want all the bells and whistles for this as it will be the MOST memorable and last the rest of my life.

I mean, we've lasted THIS long without separating.  I'm sure the rest of our life will be just like these last 6 years.  The only sticking point might be my work travel.  *shrugs*  This trip was sprung on me right after my PWP review.  Um...for those NOT in the fed world that's Personal Work Plan.  Anyway, I got good news then bad news.  Well, it's not really BAD news per se, but I'm a bit wigged out about it ATM. 

Okay.  The next trip is not back to Bogota.  The next trip is... BOSNIA.  Yup.  I'm hopping the pond for the first time in my life and it's for work.  Well, it's not really set in stone yet.  It may be postponed to where I can't go.  Because we're getting married in October, remember?  Then again, it may be postponed to November.  *waves to Mom*  We haven't quite set our dates for a trip to Maui yet.  It really depends on whether the condo is available.  Anyway, I do need to chat with Mom about planning that trip.

Essentially, the last week of every month is month end reporting.  Since I haven't QUITE finished the SOP on that, I can't really ask anyone else to step up and complete that task.  They'd probably just screw it up and I'd have to fix it next time.  Something about this type of job security...

Anyway.

S chimed in on this dish.  Yup...he's snoring now.  LOL  When I was making the menu he decided he wanted to make some baked chops.  I think we bought a package on sale on Saturday when we stopped to get the fixins or the sweet potato skins?  I think that's how it all started.

He said baked ribs with barbecue sauce.  Okay.  Sounds good to me!  But seriously.  What do you serve with ribs?  Coleslaw and?  Baked beans?  Nope. Too messy.  Fries?  Nah.  Mac and cheese?  OKAY!  So, I made the stove top macaroni and cheese.  It's pretty easy.  Cook some pasta, add some milk and butter, and then toss in some cheese.  *shrugs*  It's cheesy and tasty.  Maybe I'll post about that later.  We'll see.

S's Baked Barbecue Ribs

Ingredients
  • 2 pounds country style pork ribs
  • 14 ounces barbecue sauce
  • 1 cup onions, chopped
  • 4 cloves garlic, chopped
Cooking Directions
  1. Preheat oven to 350.
  2. Heat a large skillet coated with cooking spray over high heat. Add ribs and brown
  3. on all sides.
  4. Place in a 9 by 13 casserole dish coated with cooking spray. Top with onions and garlic.
  5. Pour barbecue sauce over the ribs. Cover and bake at 350 for 2 hours or until tender.
  6. Cool slightly before serving.
