Nicoise Shrimp Salad


I always see those recipes and pictures of tuna Nicoise salad. They look so yummy minus the tuna. Unless it's albacore canned or really uber fresh tuna I'm probably not going to like it. But I do like shrimp. I used to eat my weight in popcorn shrimp when I was little. LOL *waves @ Mom*

Anyway, this salad is something you can prep on the weekends and then eat during the week. Everything that needs to be cooked will need to be refrigerated. So, it's a perfect prep on the weekends meal. It's a perfect picnic meal. Take to a party salad. And the dressing. OMG it was delicious!! I WILL be making that again. That's for sure.

Bosslady says to me today, "We need to clone you.  I need you to do something."  LOL  Some people just use it as a saying, but for me it's surrealistically true; there aren't enough hours in the day.  I started on one project only to be re-routed to another one that would take up the rest of the afternoon.  I CAN.NOT.WAIT until that financial specialist starts work.  Then hopefully they will be able to do what I have been doing for this region.  I'm so tired of dropping everything to explain the spending...AGAIN.  *sigh*


I mean, I have my own work to do.  I can't spend all my time futzing around with this stupid thing.  Seriously.  Not to mention people are trying to just drop their stuff off on to me because they can't be messed with actually LEARNING their job.  They just hand it off with 80 billion excuses to include bosslady told me I couldn't.  Um...no she didn't.  Stop lying.

And please...do not cop an attitude when I try to get you to actually do your job instead of trying to pawn it off onto me.  Seriously.  I've had this conversation about 4 times before you.  I'm not "picking" on you.  I've said this exact thing thing in the exact same way to all 4 before you.  Get over yourself.

I actually had to take Monday off.  S hurt his back at work and I had to take him to urgent care.  We were going to go chiro, but he opted for urgent care instead.  Which we could have done on Sunday, but I was fine with taking Monday off.  I don't get to play hookey all that often.  Actually, I don't play hookey hardly ever.  Makes it difficult with S and messes him up if I do.  That is unless he's taking the day off, too.  But usually when he takes a day off, I can't because there's a deadline at work.

Speaking of which...

Month end is coming up soon.  We'll have to work on reporting....excuse me...make that *I* will have to work on the report next week.  No.  It's never ending.  Thank you for asking!

Oh.  Wow.  There are SO many awesome blogs out there! OH OH OH I KNOW!  I'd love to swap blogs with the King Arthur Flour Blog!!  That would mean that I was in the King Arthur Flour kitchen and could make, create and bake WHATEVER my heart desired!  #NOMZ!

Ugh!  I'd be here all day!  I love each and every one of them and love seeing my friends posts and new friends posts.  There's so much inspiration in all of them!  Just peruse my list of linkies to find ALL my faves.

3. What is the best thing that blogging has taught you?

Think more creatively.  Not that I didn't before, but to seriously look for something that hasn't been done before or at least hasn't been pinned all over God's green Earth.  I'm not a bandwagon type blogger that just wants to follow the current trends.  I'm trying to be the trend setter!  *snort*

4. If you could turn back time, what would you change about your life?

Nothing?  I mean, if I even changed one teenie, tiny little thing, I wouldn't be the same person.  And contrary to popular belief, I like the person I've come to be.
 
5. How do you schedule your blog post and do you use any type of system?

Um...after I've written them.  When do I write them?  Whenever I have time.  Whenever I'm not exhausted from work.  Just...whenever.  The day job is kind of getting in the way of my blogging, but it does pay the bills and allows me TO blog. 

Okay.  I have no real pictures of making this salad.  I mean...boil and drain boil and drain boil and drain just really isn't all that photographically challenging.

Assembly?  THAT was challenging.  I tended to pile things too high and have too much.  I mean, it looks amazing so why not stuff your face with it, right?

Nicoise Shrimp Salad

Ingredients
  • 1 pound shrimp, cooked and cooled
  • 2 cups green beans
  • 2 cups red potatoes, peeled and diced
  • 6 ounces marinated artichoke hearts in water (Rienzi)
  • 2 whole Roma tomatoes, cut into wedges
  • 3 whole hard boiled eggs, cut into fourths
  • 16 whole kalamata olives
  • 1 cup red onion, thinly sliced
  • 3 cups Romaine lettuce
  • 1/4 cup tarragon vinegar
  • 2 tablespoons dijon mustard
  • 1 packet Italian dressing mix (Good Seasonings)
  • salt and pepper to taste
Cooking Directions
  1. Bring a saucepan full of water to a boil. Add shrimp and return to a boil. Remove from heat and rinse in cold water.
  2. Bring a saucepan full of water to boil. Add green beans and cook until crisp tender; about 5 to 7 minutes. Drain and rinse in cold water.
  3. Peel and dice potatoes. Place in a saucepan full of cold water. Bring to a boil and simmer 10 to 12 minutes or until fork tender. Drain and rinse in cold water.
  4. Place eggs in a small saucepan of cold water. Bring to a boil and cook 5 minutes. Remove from heat and let rest 15 minutes. Peel and rinse in cold water.
  5. Drain artichoke hearts.
  6. Slice tomatoes into 8 wedges each. Chop olives and lettuce.
  7. Arrange lettuce on 2 places. Top with green beans, potatoes, artichoke hearts and tomatoes. Place shrimp in center.
  8. Top with olives and hard boiled eggs.
  9. Combine vinegar, mustard, and dressing mix in a small bowl or bottle. Shake until well blended. Pour over salad and serve.
