So, this doesn't count as a cooking the world recipe. I make this all the time. I make it a little different by including the caraway seeds instead of using rye bread for the meatballs. Most recipes call for rye bread crumbs. I don't buy rye bread. So, I came up with an alternative.

So the new financial spec starts next week. Me and negative Nancy have to put together a training packet for him. *sigh* Three days? You expect me to come up with something for YOU who's not even my BOSS in three days? Um. Have ya checked the calendar? IT'S MONTH END YOU TWIT! Again...apparently I have NOTHING to do and can JUMP on S like this.

Mom's coming down this weekend. She's dropping off some stuff I didn't get to pack up when we were there last. I had it in my head she was leaving July 5th. Nope. I think she changed her plans. That's her MO. LOL She's a go with the flow type of personality. It'll be good to see her and just chill. I think we both need that. To just chill. I just need to figure out what to make for dinner Saturday night. I really don't know. And I didn't plan anything for Saturday because she was coming. So, it's a clean slate as to what to cook.
I'm sure I'll think of something yummy to make.
Heat a large skillet coated with cooking spray over medium-high heat. Add mushrooms and saute until brown and juices have released. Remove from heat and keep warm.
Combine beef, bread crumbs egg substitute, ground caraway seeds, salt, pepper and nutmeg in a medium mixing bowl. Stir gently until just combined.
Heat a large skillet coated with cooking spray over medium heat. Form 1 1/2 to 2 inch meatballs and brown on all sides.
Combine broth and cornstarch and add to meatballs once browned along with mushrooms and bring to a boil. Simmer 5 to 10 minutes or until meatballs are cooked through. Once meatballs are cooked through and sauce has thickened, remove from heat and stir in sour cream.

Ingredients
- 1 pound ground beef, lean
- 1 ounce fresh bread crumbs
- 1/4 cup egg substitute
- 2 teaspoons caraway seeds, ground
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg
- 2 cups mushrooms, chopped
- 2 cups fat free beef broth
- 2 tablespoons cornstarch
- 1/4 cup fat free sour cream
Cooking Directions
