Anyway, that left me with taking Metro on Wednesday. Which I'm fine with.
I've done it before, I'll do it again. The line that I'm on is frequently called the Orange Crush. It's the Orange line and in the afternoons it can be packed like sardines crushed in a can. More than once I've been on it when it's like this. HORRID especially if someone near you hasn't bathed properly or has gas. I think I'd chose the former rather than the latter.
Anyway...
Sometimes in the afternoons I can catch the train JUST RIGHT to see the prettiest shepherd service dog I've ever seen. He's fluffy. He's adorable. He's NOT a German. He's a different kind. The head is WAY too big for a German Shepherd. I looked him up once, but couldn't find him again. He's really tall, too. AND looks SO FLUFFY!
As I'm sitting there admiring the view, the man standing across from him, who hasn't spoken to the owner of the dog, just reaches over and pets the dog. Now, this wasn't some kid. This was a full grown, older man. I'm thinking what rock he has crawled out of that he doesn't know you're not supposed to pet working dogs. If there's a harness on, don't even think it, consider it, attempt it.
*kicks soapbox back under bed*

In all that carb friendly stuff Dad gave us were two bottles of barbecue sauce. Hm...what to do with that. Orange barbecue sauce? I have marmalade. Raspberry? Blueberry? NOPE! Been done. Cherry? Seen it recently so no. Wasn't there a jar a apple butter? Yes yes I believe there was!
Yes, it seems as if I'm on an apple kick. I guess I'm wishing it's fall with all it's apple-y goodness and warm days with cools nights. I. HATE.SUMMER! Just saying.
There's also like 4 boxes of Triscuits. Suggestions? OTHER THAN a cheese party? Well, I'm sure I'll think of something besides pace planting in the box. LOL
I threw this in the slow cooker Saturday morning before our hours upon hours spend in WalMarts. You see, last weekend I was in the self check (cause bagging groceries is a lost art) when the computer crashed in the middle of processing my card. I was ASSURED that my card wasn't charged. Yup! You guessed it! It was!
I had no receipt, because nothing printed. They couldn't find EITHER transaction when I called on Monday. So, there I was with a partial print out of the my online bank statement. They were able to print a copy of the receipt. Here's the catch. Because it doesn't reprint with a bar code some poor checker had to hand key ALL items in for the refund. Yup. An hour. I don't blame her. She just drew the short straw.
Apparently I wasn't the only person with this complaint this week. 4 others have had the same issue.
Then we picked up S's suits from the tailor and then headed to another WalMart that had a vision center so I can get new glasses. I can't see. It's been 5 years, I think? After this visit, I do believe that I will have to bring my computer glasses home with my daily now. I can't see much to read any more. And sewing on these buttons for the sweaters is difficult at best.
Yeah those buttons. That's a sweater I'm sending to K cause she's having a baby girl. I have two other sweaters. And a bunch of scarves. I should do an Etsy shop, but I'm too busy doing this. LOL. I have a day job. It makes me EX-hausted sometimes.
That's why I make recipes like this one; quick, easy, healthy, tasty.
Combine first 11 ingredients (barbecue sauce through poultry seasoning) in a small mixing bowl.
Spray the insert of a slow cooker with cooking spray. Arrange chicken thighs on the bottom of the slow cooker and pour the barbecue sauce on top. Cook on low 8 to 10 hours or until the meat easily falls off the bone.
Remove the thighs and allow to cool enough to handle. Shred the meat with 2 forks and return to the slow cooker.
Lightly toast the hamburger buns and top with 1/3 cup of the chicken mixture. Serve with coleslaw and Easy Fries.
This is not spicy. There's a little heat to the sauce. If you want more, then increase the cayenne.

Apple Butter Barbecue Chicken Sandwiches
Ingredients
- 12 ounces barbecue sauce
- 1/2 cup apple butter
- 1 tablespoon ground mustard
- 1 teaspoon dried thyme
- 1 tablespoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon celery seed
- 1 tablespoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon poultry seasoning
- 1 teaspoon apple pie spice
- 2 pounds chicken thighs, skinned
- 8 whole hamburger buns
- Combine first 12 ingredients (barbecue sauce through apple pie spice) in a small mixing bowl.
- Spray the insert of a slow cooker with cooking spray.
