African Beef and Peanut Stew

In an effort share more of my personally outside of the snarkasm, here's the Five Among Friends for this week.  I'm probably doing it a little earlier than normal, but I'm trying to share more rather then vent more.  Lol 

Considering month close is next week, we'll see how long this lasts.

So, I'm trying this thing where I want to make a recipe from every country of the world.  Since this is West African, and not a country, I'm not counting it, but it is the recipe that did inspire me to attempt this.  Not that I'm actually going to travel to these countries, I'm just searching for their cuisine and see if I can make something of the style or adapt a recipe that I find to my tastes and likes.  *shrugs*  We'll see how it goes.

Okay.  This next bit is not for the easily squeamish.  I mean, it made me shudder and I watch horror flicks and stuff like that often.

This morning, as I was walking Missy, I came across this creature.


Well, it was upside down when I came across it.  IT.WAS.HUGE!  I mean, the LARGEST beetle I've ever seen IN MY LIFE!  It's the Eastern Hercules Beetle; the largest beetle in the US.  WOW.  I had no idea things like this existed in the US.  I thought only super huge things grew in places like the Amazon.  

I took Missy back home, got my grocery list together and then headed out to shop about 2 hours later.  The poor "thing" was still on it's back.  I did feel sorry the thing and decided to flip it over and snap a few pictures.  I wish I had a quarter or something so you can relate to the size of this monster beetle.

I can attest to the fact that they can grow over 2 inches long.  This one sure was!!  It was rather creepy and interesting all at the same time.  I just thought I'd share this little educational snippet with y'all.

There's more than that, but it seems to clump my shuffles together.  It's sort of weird.  My shuffle isn't a true shuffle.


2. Who was the last person you held hands with? 

Steve.  Just this morning.

3. Name two personality traits of yours that you love and explain why.

As my boss puts it, I always celebrate even the small victories.  I mean, what's the point of NOT celebrating them.  It's a victory no matter what.  So...say WOO HOO!  Do a fist pump or a chair dance.  SOMETHING.

And along the same lines, I usually am a positive person.  There's very rarely an occasion where I just can't find something positive about a situation.  Now, that's not the same with people...  LOL
4. Who is your best friend? How long have you been friends? Where did you meet?

My best friend is S.  We met 6 years ago online.  Playing poker.  Yes, my SO is my best friend.  Maybe one day I'll tell you that story.  We "technically" met face to face at his apartment in Cleveland.


5. If you could do one random, crazy thing, with no fear of doing it or any lasting effects, what would it be? 


Um...Wow.  I have no idea!  I'm not one to just go off and do something crazy.  If I had unlimited amounts of money I probably would just hop on a plane to wherever and see what happens.

This recipe is pretty simple.  I love those.





Trim and cut beef into bite sized pieces. Arrange onions in the bottom of a slow cooker liner coated with cooking spray. Top with beef and carrots. 

Sprinkle with the Berbere seasoning.




Combine the beef broth and peanut butter in a small mixing bowl.  Pour mixture over the beef and vegetables. Cook on low 8 to 10 hours.  Turn to high 30 minutes before serving. Combine the water and cornstarch in a small mixing bowl. Add to stew mixture and simmer until thickened; approximately 30 minutes.



Serve over rice with naan.

Ingredients

  • 1 1/2 pounds beef stew meat
  • 2 cups onion, chopped
  • 2 cups carrots, chopped
  • 2 tablespoons Berbere seasoning
  • 3 cups low fat beef broth
  • 1/2 cup peanut butter, creamy
  • 3 cups brown rice, cooked
  • 1/2 cup water
  • 3 tablespoons cornstarch
Cooking Directions
  1. Trim and cut beef into bite sized pieces. Arrange onions in the bottom of a slow cooker liner coated with cooking spray. Top with beef and carrots.

  4. Pour mixture over the beef and vegetables. Cook on low 8 to 10 hours.

  6. Serve over rice with naan.
