Cornbread Crusted Barbecue Chicken Pie

I can't remember how I thought of this.  It just sort of came to me.  It's like a tamale pie meats barbecue?  Something like that?  I LOVE tamale pie.  I LOVE barbecue.  I LOVE this dish!

Sunday, I was a busy bee in the kitchen.  S worked so I planned grocery shopping and a crapton of other things.  Um.  I got shopping done.  I prepped for Tuesday dinner.  I made some caramel corn.  I cleaned some toilets.  That's about it.

I really do need to prep more for the weekend grocery list.  I get so focused on the task at hand that I just don't see the big picture.  

I also really do need to be more organized.  I need to write about 4 posts, but just have been a sloth and just not wanting to get on the computer in the evenings.

LOVE the cooking.  not so much the writing.  LOL  I'm sure I'll have a few rants to go through because I just received the month end close today.  Yipee skippy.  *sigh*

I was cooking the caramel corn in the oven when S came home.  "What's that?"

"Blah Blah Caramel corn."  The blah blah is top secret.  LOL
"Huh.  That doesn't sound good.  Where did you see this recipe?" 
"Um...I haven't.  I made it up."
"Well, that sounds...different."

Gee and you wonder why I bring all the stuff I make into work.  Because you usually turn your nose up at what I make or don't like the way it tastes.  Case in point...the banana bread I made us is not cooling as croutons for tomorrow.  HALF the loaf.

He said to me Friday, "Why do you feel the need to feed those people?"  "I don't.  I just like to make food and figure we're not going to eat it.  Better to take it in there than to throw it out."  "Oh."  

So when he turned his nose up at the caramel corn, I thought, "Okay.  I'll be taking THAT to work."

I told him to sit while I was making dinner.  What was it?  Oh yeah!  Hash brown cottage pie.  I know.  It didn't come out the way I thought, but it was still yummy!  And to be honest, I didn't prepare the way I wasn't to, either.  Oh well.  Something else to work on later.  

Where was I?  RIGHT!  So, I'm making dinner and he sneaks up and grabs a handful of caramel corn....like 5 times while I'm making dinner.  I just figured he was hungry and it was there.  Yeah...no.  This morning, I'm packing my bag for work and add the corn to it.  "Is there going to be any left today?"  "What?  Corn?  Sweetie, I'll bring it home.  I'll just take pictures of it at work.  I won't even set it out for others to eat if you want me to."

THAT was funny!  He's usually not like that with any of my kitchen hooring.  Guess he really like it and I should make some more.  LOL

Anyway, on to the cornbread goodness that is this recipe!


Preheat oven to 350.  Combine first 6 ingredients in a mixing bowl.  


Pour half of the cornbread mixture in the bottom of a 9 x 12 casserole dish coated with cooking spray.
Spread the barbecue chicken over the batter then top with remaining cornbread mixture.


Bake 30 to 40 minutes covered. Remove cover and bake an additional 15 minutes.  Allow to cool slightly before serving.

Heh.  The remnants after we ate.  It was sweet, cornbread-y goodness!  Perfect with some fresh corn.

Ingredients

  • 17 ounces cornbread muffin mix (Jiffy)
  • 1/2 cup egg substitute
  • 2/3 cup skim milk
  • 14 ounces cream style corn
  • 3/4 t teaspoon salt
  • 1 cup low fat cheddar cheese, grated
  • 4 cups barbecue chicken, shredded
Cooking Directions
  1. Preheat oven to 350.
  2. Combine first 6 ingredients in a mixing bowl.
  3. Pour half of the cornbread mixture in the bottom of a 9 x 12 casserole dish coated with cooking spray.
  4. Spread the barbecue chicken over the batter then top with remaining cornbread mixture.
  5. Bake 30 to 40 minutes covered. Remove cover and bake an additional 15 minutes.
  6. Allow to cool slightly before serving.
