Easy Pork Schnitzel


The other evening, S was unlocking the front door. There was something stuck IN the door. As he was opening it, it came flying out of the door. He hadn't seen the piece of paper so when it flew out of the door he said, "Jesus Christ!" My apologies to those who are religious and may have taken offense. Anyway, as the paper fluttered to the ground, I saw what it was and started to LMAO!! I mean, REALLY laugh out loud almost with tears streaming down my face. It was a flyerthat had the face of Jesus Christ on it. So, literally it WAS Jesus Christ.


I honestly don't think I'm mentally and physically ready for this trip. I know it's going to be exhausting. I just HOPE hope hope that I don't hit brick walls and they DO help us with our follow up on this audit. It really does irritate me that HQ vs. in country crap that goes on. I understand that sometimes communication falls through the cracks, but the us vs. them idea...I mean, I thought we were all on the same team? Aren't we? Us? Them? I thought it was WE!? No? *sigh*


So, I don't think I'm ready. But, I have to be. It's coming whether I want it to or not. At least we're staying in the good hotel again. YAY! The smell....the breakfast....mmmmmm.

Needless to say, this week I'm tired. I mean capital T I R E D tired. Today was the worst this week. I'm Stretch Armstrong and just grab a limb. Thankfully, dinner was easy tonight. Quick pork schnitzel. Seriously. Who doesn't love fried pork?


I usually buy a large package of pork from Costco and then divide it up into meals. They're usually pretty thick chops, so I can get one meals worth with 2 chops. There are usually 8 chops in a package, so I can get 4 meals worth for around $15 or so? Not too bad. Before I cook them, I always trim any extra fat off chops. It’s all about keeping the fat grams down for me.

Take the trimmed chops and pound between two sheets of plastic wrap with meat mallet to about 1/4 inch thick.



Using three shallow bowls, dredge the chops in the flour, egg substitute, and finally the bread crumb mixture.


Heat a large skillet over medium-high eat.  Add oil and swirl to coat.  Cook the chops 2 to 3 minutes on each side or until done.  Pounding the chops thin, means it takes hardly any time at all to cook these chops.

It will probably take longer to cook your side dishes than it will to whip up these tasty gems.

I served them with roasted Brussels sprouts and buttered noodles with garlic salt.

Ingredients
  • 1 pound pork chops, trimmed
  • 1/2 c all-purpose flour
  • 1/2 c egg substitute
  • 1/2 c panko bread crumbs
  • 1/2 c dry bread crumbs
  • Salt and pepper to taste
  • 2 T canola oil
Cooking Directions
  1. Trim pork chops. If they're are really thick, slice in half horizontally.
  2. Place between two sheets of plastic wrap and pound thin with a meat mallet.
  3. Heat a large skillet over medium-high heat. Add oil and swirl to coat.
  4. Place the pork and egg substitute in shallow bowls. Combine the bread crumbs and panko in a third shallow bowl.
  5. Dredge pork in flour, egg, and bread crumbs.
  6. Cook 2 to 3 minutes on each side until cooked through.
  7. Serve immediately.
