Chili Roasted Parsnips and Potatoes...and Small Victories

We have iPhones.  Yeah...I know.  Not so sure my next one will be an iPhone after the most recent incident with the Apple store.  Anyway, we use the Waze ap on the phones on the way home.  There's one point on our homeward travels where it says, "Heavy traffic reported ahead."  Um.  No there's not.  By that time, we're getting off all major roads and onto the side road that takes us home.  There's heavy traffic on the OTHER side of the road, but not this one.

Well, since my return from Bogota, S claims that his phone NEVER said that and it was just my phone that was messed up.  Well, we already know this, but still.  I had been using my phone in the morning and his phone in the afternoons.  You get points for using it and thought it would be best to share the usage time so we get even points.  Anyway, one day last week, I forgot and had mine running when it chimed in again, "Heavy traffic reported ahead."  We had a nice laugh (and by that I mean he laughed at me and my defective phone).

SO this week last week I was determined to prove him wrong.  There's no way that my phone could be THAT messed up, is there?  NO!  No, it' just CAN'T BE!  *snicker*  So, each day last week most of the time last week I had BOTH phones running the ap.  The suspense was KILLING me!  I SOOOOOO wanted to prove him and his "sense of humor" wrong.

Don't get me wrong, I love the man to death!  And I love that he plays with me...most of the time.  There are those few rare occasions where it does rub me the wrong way or is a bit too much for me to deal with, but he knows when those are and usually doesn't bug me.  It's just, well, I wanted to prove to him it wasn't MY phone that both of them did it.

So, after almost the whole of week of eager anticipation, my victory FINALLY arrived!  There we were, in the same spot we always are when the chime sounds.  Except this time, mine started and his finished it!  I did my best victory dance in the car.  It was small but effective.  *giggle*


If you haven't roasted parsnips or even HAD parsnips, you should.  They're like adult candy.  Take the sweetness of the most sweet carrot you've ever had in your life and multiply it by about 10....or maybe 20.  When they're roasted or even sauteed, the sugar is concentrated and they really do taste like dessert.


I paired these with potatoes.  I wanted a roasted potato to go with the steaks.  Then I remembered that I bought a bag of parsnips as an impulse buy the other day.  Then I thought about the sweet of the parsnips with some spice and it might be an interesting combination to go with the steaks.  Yes, I realize that the steaks have spice already, but well, that's what I wanted for dinner.

I peeled and chopped 1 bag of parsnips (because mine are always sold in bags like carrots).  Then I peeled and chopped 3 medium potatoes.  I rinsed the potatoes and then tossed them in a bowl with the parsnips, 1 tablespoon of paprika, 2 teaspoons of chili powder, and 1/2 teaspoon of chipotle chili powder and then sprayed them with cooking spray to coat.



I covered a baking pan with aluminum foil coated in cooking spray.  I spread the potatoes and parsnips out in a single layer and then baked them at 425 for about 20-30 minutes or until the vegetables are fork tender and crisp, making sure to stir them halfway through.

They made the perfect side dish for the Mole Rubbed Flat-Iron Steaks.


Chili Roasted Parsnips and Potatoes




Ingredients
  • 4 c parsnips, peeled and chopped
  • 4 c potatoes, peeled and chopped
  • 2 T paprika
  • 2 t chili powder
  • 1/2 t chipotle chile powder
  • Cooking Spray
Cooking Directions
  1. Preheat oven to 425.
  2. Combine 4 chops of peeled and chopped parsnips with 4 cups of peeled and chopped potatoes.
  3. Toss with remaining ingredients and coat with cooking spray.
  4. Cover a baking pan with aluminum foil and then coat with cooking spray.
  5. Spread parsnips and potatoes in a single layer on the baking sheet and bake for 20-30 minutes or until the potatoes and parsnips are fork tender and crisp.
