I also made a Chicken Kiev Stir-Fry a while ago. That was pretty yummy, too. I've made several Asian style stir-fries, also. They're just super quick and easy to whip up on a weeknight. Or a weekend. But I usually keep them to the weeknights where I want a quick and easy meal to throw together.
Which sort of doesn't make sense for last night. It did this...ALL night.
Heh. I should have listened to the weather peeps, but considering S had to go to work, we actually hit the sack at 8pm that night just in case his third shift officer couldn't make it in. And he packed a bag just in case he got stuck at work, too. Thankfully, he didn't.
The alarm went off at 4:30. I think we were both awake having gone to bed an hour earlier. As soon as I took Missy out for her morning constitutional, I realized it was going to take all the time I had before S left to dig out the truck and get it ready for him to try to get to work. Security is 24/7/365. People don't realize this. One of my neighbors commented about the roads getting worse as you head out. I told him, "He's security. He has no choice and HAS to go to work. Just because it's snowing doesn't mean his job stops." People just don't get it.
This picture shows the spot where the truck USED to be. He left around 5 or 5:30 and this was taken about 4 hours later. At one point, it was snowing 1 to 3 inches per hour. It was crazy. And yes, I did shovel most of that snow out of the parking spot. They blew the sidewalks clear and thankfully no one tried to part there while he was at work.
I hope people get this obsession with stir-fry meals. Not necessary Asian style stir-fry dinners, but other types. Like this German style pork and cabbage stir-fry. Yes, I know. You don't think of pork stir-fry that way, but it really was tasty and I put this meal together in about 20 or 25 minutes start to finish. It truly is an easy and tasty meal to throw together. Not to mention the ingredients were pretty inexpensive. What other types of stir-fry meals can you make? That are not Asian style? Hmm...I must think about this some more. Stay tuned. But in the meantime...
Stir-Fried Pork and Cabbage
Ingredients
- 1 pound pork, thinly sliced
- 1 cup onions, chopped
- 2 cups cabbage, shredded
- 2 cups chicken broth
- 1 tablespoon Dijon mustard
- 2 teaspoons cornstarch
- 1 teaspoon caraway seeds
- salt and pepper to taste
- 8 ounces egg noodles
- Heat a large skillet coated with cooking spray over medium-high heat. Add pork and brown on each side.
- Combine the chicken broth, mustard, cornstarch and caraway seeds in a small bowl.
- Add onions and cabbage. Cook until crisp tender.
- Pour the broth mixture over the pork mixture and simmer until thickened.
- Cook noodles according to package directions omitting salt and fat.
- Arrange one cup of noodles on each of 4 plates and top with 1 1/2 cups of pork mixture.
