Anyway.
Since I won a gift certificate to Freund, I've been making herb blends and salt blends as gifts. Because now i have cute containers to put them instead of the recycle jars. I'll still keep the recycled jars, but have prettier ones to use for now.
Dad used his lemon rosemary salt the other day for steak and said it was delicious! I asked about the poultry seasoning. He said he used it on Cornish hens and it was very good! I didn't ask about the BBQ rub. It's been too cold to start up the grill. I've made some berbere seasoning for us to use and taco seasoning. I haven't branched out into garam masala. I'm DYING to try to recreate the crack that my friends mother in law makes. It's the shiznit. It's like that hot sauce commercial....I put that S on everything. *snort*
This salt smells AH-mazing!! I allowed the zest to rest with the salt for at least a week. I'd shake it periodically to make sure it was blended well. When I opened the container...WOW! This lemon aroma just permeated the air. Delish. I can't wait to send this one on it's way. I made enough for S and I to use and I can't wait! It truly does smell fabulous and you should try it. It's super easy and so very tasty.
Lemon Dill Finishing Salt
Ingredients
- 1 cup coarse sea salt
- 1 tablespoon lemon zest, grated
- 1 1/2 tablespoons dried dill
- 1 teaspoon whole black peppercorn
- Combine all ingredients in a small bowl. Store in an airtight container for at least a week, shaking periodically to distribute the lemon rind.
- Pour into a salt grinder and use to flavor fish, chicken or even vegetables.
