So.  Here's the scenario.  You've planned the "big" dinner.  You're in the middle of cooking and baking up a storm.  You're oven is jam packed.  You're hair is a mess.  You haven't showered.  You're almost SURE you smell and the stench has driven everyone out of the kitchen, which is fine with you.  They're just in the way anyway.  Then it hits you.  Like a MAC truck.  Your pie shell box, only has ONE LEFT!  Words escape that would make a sailor blush.

You panic.  It's not in your game plan to whip up another pie shell for your apple pie.  You're already behind schedule by 20 minutes.  That's a HUGE #FAIL in your mind.  You freak.  You begin to hyperventilate.  Cold sweats.  WHAT THE $^&%* ARE YOU GONNA DO???


Okay.  *slap*  CHILL!  Apple pie DOES NOT have to be a double crust.  I know!  It's an amazing concept!!  Think of it like an apple crisp in a pie crust.  I KNOW, RIGHT??  Tasty.  Easy,  DELICIOUS!  AND it only requires one pie crust, WHICH YOU HAVE!!  Yes yes, I know.  I have saved your sanity and more importantly, your meal.  No, a simple thank you will do.

Streusel topping consists of ingredients found in most pantries; flour, sugar, oatmeal, and some butter from your fridge.  Honestly, I don't have butter, but I have margarine, and that would work just fine.  I used butter spray for this recipe, just to see how versatile streusel topping is.  That worked as well.  Was a bit crispier than usual, but tasted yummy.

Streusel Topped Apple Pie

A Kitchen Hoor | Streusel Topped Apple Pie







Ingredients
  • 4 cups apples, thinly sliced
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 tablespoon apple pie spice
  • 1 whole pie crust
  • 1 cup flour
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1/2 cup quick cooking oats
  • 4 tablespoons butter, softened
  • 1 whole egg white, lightly beaten
Cooking Directions
  1. Preheat oven to 350.
  2. Carefully place the pie dough onto the pie plate. Trim any excess and crimp edges.
  3. Toss the apples with the sugar, flour, and apple pie spice in a large mixing bowl.
  4. Combine 1 cup of flour with the brown sugar, salt, and quick cooking oats. Using two knives or a pastry blender, cut in the butter until the mixture resembles coarse meal.
  5. Spread the apple mixture into the pie shell. Top with the streusel topping and bake at 350 for 1 to 1 1/2 hours or until the apples are fork tender and the crust is brown.
  6. Cool slightly before serving.
