What if we all could make one change? One simple, small change that could, collectively, change the world that we live in. It's a pretty amazing concept, but so minuscule if you think about it. What am I talking about? Packaging. Have you ever noticed how much packaging some products have? What type of packaging they're in? Have you ever thought about how that packaging has an adverse impact on our World?

I love that last one. I don't know about you, but I've never been a fan of the OTHER cranberry jelly in the can. I can always taste the can. That's NEVER appetizing and one the main reasons I've never really eaten it. I've always made some other sauce with cranberries. Actually, truth be told, I always forget I bought cranberries to make sauce and wind up baking with them after the Holidays. *snort*
Not to worry. There are plenty of products out there in Tetra Pak packaging. It will be very easy to make that small change. From broths and stocks to beans and even pre-made soups; there's enough out there to start making a difference. If enough of us make the change, then maybe the *coughOTHERcough* manufacturers and distributors will begin to hear us and make the change, too. A girl can dream, can't she?
I opened the Pacific cranberry jelly I received and OMG it tasted like cranberries! A-MAZING! I KNOW! How incredible that food actually tastes like what it actually is. Which is why I was so inspired by their great flavor not only to make these baked doughnuts but to vow to Become Carton Smart starting this Holiday season.

- 70% of Tetra Pak cartons are made from selectively harvested, regrown trees.
- Tetra Pak cartons uses oly 1/3 the packaging of the same item in a can or other packaging.
- They are SO stack-able! I don't know about you, but those cans are just UNRULY! And they NEVER stack right!!
- Amazingly enough, Tetra Pak cartons produce 60% less waste, and that's even after taking into account recycling those pesky cans.
- And the best part of all.... THEY TASTE BETTER!!

@CartonSmart Cranberry Orange Baked Doughnuts
Ingredients
For doughnuts:
- 1/2 cup whole wheat pastry flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 1/2 cup egg substitute
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup fat free half and half
- 1/4 cup butter, melted
- 2 tablespoons orange zest
- 1 cup powdered sugar
- 2 tablespoons cranberry jelly
- Preheat oven to 350.
- Combine first 9 ingredients (whole wheat pastry flour through nutmeg) in a large mixing bowl; stirring well with a whisk.
- Combine the next 6 ingredients (egg substitute through orange zest) in a small mixing bowl.
- Pour the egg mixture into the flour mixture and stir until just combined; being careful not to over mix.
- Using a paper towel, coat a doughnut pan lightly with canola oil. Fill the pan 2/3 full with batter and bake at 350 for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Remove and cool 5 minutes in pan then remove to a wire rack to cool completely.
- Combine the powdered sugar with the milk, cranberry jelly and remaining orange zest. Drizzle the glaze over the doughnuts or simply dip the doughnuts in the glaze. Allow the glaze to set before serving.
Stay tuned. I have some tricks up my sleeve for the other products I received to try. I envision the chicken stock as part of some stir-fry next week.
