Left Over Turkey Hot Browns

S is in security.  His job is essentially 24/7/365.  Just because it's a holiday doesn't mean he gets to stay home, like his supervisor and the upper echelon of his work place.  He is a cog.  He had to work Thanksgiving, like he has since he moved here and began working for that crap company.  Okay.  It wasn't always a crap company, but in the last two years, they've hired a new COO and now it's all about how much money they can make themselves.  So to say I'm bitter about how they treat him is an understatement.

But that is not what this post is about.  This post is about left over turkey.  The smallest turkey I could find for the two of us was 12 pounds.  A breast you say?  Nah.  Why shell out almost twice as much for a turkey breast just so it will be smaller?  Less left overs?  Less turkey to make delicious dishes like this one?

It was me and the girl for most of the day on Thanksgiving.  I resisted the urge to make these the whole day.

Cranberry mimosas, and BOY were they GOOOOOOOOOOOOD!  I may have to make them for Christmas, too, and New Years, and well, ALL YEAR!  *snort*

Dinner looked like this:



That's green bean casserole, turkey, home made cranberry dressing, stove top stuffing (no I DO NOT make it from scratch.  Maybe I'll talk about that one day.) and mashed potatoes.  The turkey was probably the best I've ever made.  I brined it with free turkey brine mixture from My Spice Sage.  I order from there all the time and it just so happens they give me free stuff all the time.  It's a win/win.  Oh, and dessert was the streusel topped apple pie.

I've been dying to make these.  They are home to me.  If you didn't know, Hot Browns were invented in Louisville, KY.  Like I said, it's home to me.  I have memories of sitting in my the kitchen watching these tasty sammies being prepared for lunch after Thanksgiving.  They're super quick and easy to throw together.  And they taste A-mazing.  Because, anything with bacon tastes A-mazing.  LOL

Just look at that!!  I said look.  Stop licking your computer screen!!  I'd be willing to bet you have almost everything to make these in your kitchen.  I say ALMOST because you may or may not have turkey.  But, I'm sure you have bread (of some description), bacon, cheese, flour, milk, turkey, and tomatoes.  That's it.  Simple.  Easy Peas-y and oh so tasty!!

Left Over Turkey Hot Browns

Ingredients
  • 12 ounces turkey breast, cooked and sliced
  • 8 slices turkey bacon
  • 1 1/2 cups fat free milk
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 whole tomatoes thinly sliced
  • 8 slices white bread, toasted
  • salt and pepper to taste
Cooking Directions
  1. Combine the milk, flour, garlic salt, pepper and nutmeg in a medium saucepan over medium heat. Bring to a boil, stirring occasionally, until thickened; about 7 to 10 minutes.
  2. Place the turkey bacon on a paper towel on a microwave safe plate and heat on high 5 to 6 minutes or until crisp. Cut in half.
  3. While the milk is simmering, toast the bread.
  4. Once the milk has thickened, remove from heat and add the cheese, stirring until melted.
  5. Place 2 slices on four plates. Top with a spoonful of cheese sauce.
  6. Place two slices of bacon on each piece of bread, then top with turkey, more cheese sauce to cover, and then tomato slices. Sprinkle with salt and pepper and serve.
