Disappearing Nut Butter Banana Bread

Yup.  I said disappearing.  Cause that's what it did at work.  Disappear.  In like...RECORD time.  I will honestly say, I think it's the best banana bread I've made recently.  Not of ALL time, but it's up there.

*interesting and comical anecdote*
There's some spiced rum commercial that the tag line is "Release the Krakken!"  Well, it's S's favorite saying as of late.  You see...I got some junk in my trunk.  No?  Um...some fries with my shake?  No? 

*sigh*

I have a larger than normal posterior.  Got it now?  *snort*

Well, some pants, if I don't have a belt on, have a tendency to creep down and well...show a little crack.  As soon as I realize it, I pull my pants up and it's RARELY in public.  But, almost without fail, S chants his favorite saying!  Release the Krakken!  He said it yesterday as we were getting out of the truck.  It made me LOL.  So, I thought I'd share that with y'all.  You're welcome!  ;)

Heh.  You'd think it was the storm of the century.  People are calling out right and left so far this morning.  Gotta LOVE that unscheduled leave policy from OPM...

Anyway...so this was supposed to go WITH the nut butter cookies for #SundaySupper.  Yeah...didn't make it.  *snort*  I'm a sloth lately...seriously.

It's not that I don't have ideas...it's just the writing.  Sometimes, nothing exciting happens.  There's no snarky item I need to discuss or comment on.  And, well, I fell I'm gypping you if I just post a recipe.  that is WHY you come back each time, right?  My snarkdom AND some yummies?  Yes?  NO?  *sigh*

ONE of these days, I will get ahead of the curve and post a timely recipe for the #SundaySupper movement.  I'm shooting for the 23rd...  Just sayin.

Okay.  The brimstone-and-hellfire storm has started.  I think it best I just get this post underway and try to get some work done.  *giggle*  Yes..I'm one of THOSE peeps.  Cause I never get to take a proper lunch break so I play.

Preheat oven to 350.  Combine banana, yogurt, brown sugar, granulated sugar, nut butter, and vanilla extract in a large mixing bowl.  Beat until light and fluffy.


Combine flours, baking soda and salt in a small mixing bowl.  Stir with a whisk to combine.


Please egg whites in a small mixing bowl and beat with a whisk until stiff peaks form.  Combine the flour mixture with the banana mixture, stirring just until blended.  Allow to rest 5 minutes.


Fold 1/3 of the egg white mixture to the banana mixture until well blended. 


Add remaining egg white mixture and gently fold into the batter.


Pour batter into a loaf pan coated with cooking spray. 


Bake at 350 for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. 


Allow to cool in pan 5 minutes and then remove to a wire rack to cool completely.


I am TOTALLY loving Nana's cutting board as a nice backdrop.  Can't ya tell??  It's so much prettier than my black cook top.  AND I don't have to worry if the hot elements on the stove are going to burn through my fabric backdrops.  *snort*

Like I said, this VANISHED at work.  I will have to make another one, soon.  It really was delicious.  I am playing with meringue to lighten up my low fat baked goods.  If this bread is any indication, I will be moving to cupcakes and maybe cakes in the near future!

Oh well.  Off to build an ark!

Ingredients
  • 1 cup ripe, mashed banana
  • 3/4 cup plain, nonfat yogurt
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup nut butter (Wowbutter, Sunbutter)
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 cup whole wheat pastry flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoons salt
  • 3 whole egg whites
