It was a nice bag of taters, that we've used for various regular type food things (scramble, boiled and buttered). Nothing to write home about. When I received them, I knew I wanted to make a galette. They're just so...yummy! And the texture and taste of these taters made a perfect galette!!
This was Monday. I was a busy busy H on Monday. Cooking, cleaning, rearranging, etc etc. Just... BUSY! I can't sit still when S isn't home or else I snack myself into oblivion. I have to keep busy. *shrugs*
I guess it's my form of emotional eating? Dunno.
I received my first Influenster Vox Box!! HOW EXCITING IS THAT?? I tried the Secret Outlast Clear Gel Antiperspirant/Deodorant this weekend. It says that it gives "48 hour odor and wetness protection" and I figured this would be a good weekend to test that theory!! No. I did NOT shower Sunday or Monday. Well, I did Monday evening before S got home. I didn't want to be all ripe for him... And I must say that my pits didn't stink. So the 48 odor control IS confirmed.
Also in my Vox Box was NYC New York Color Applelicious Glossy Lip Balm, Broadway nails imPRESS Press-on Manucure, OSiS Dust It powder, and Tastykake Kandy Bar Kakes. So far, I've used the nails and the lip gloss. LOVED both, but I'm not a HUGE fan of press on nails. Though, they are pretty. If you're following on Instagram, you'd know that. What? You mean you're NOT following me on Instagram?? *sigh*
Anyway...I have no idea how I have lived life in the kitchen WITHOUT a mandoline. For those of you without one, get one. I'll wait. Got one? GOOD! Welcome to the world of mandolines! They're ♪AWESOME!♪ You can bake chips, fries, apples. All evenly and thinly sliced. Shoe string fries. Waffle cut stuff. They're A-mazing and LOVE LOVE LOVE mine!! Scalloped? Done! Chip? Done! Galette? DONE!

Preheat oven to 425. Slice potatoes 1/8 inch thick. This is best done with a mandoline. Place a sheet of aluminum foil on a baking sheet. Trace a circle onto onto the foil and then coat with cooking spray. Place one layer of potatoes onto the foil in the circular shape. Sprinkle with garlic salt and parmesan.
Continue layer potatoes, salt and cheese until all potatoes have been used. The stack should be about 1 1/2 inches high. Bake in a 425 oven for 40-45 minutes or until the potatoes are fork tender.
Slice into wedges and serve. Preferably witih Portobello Wellingtons!

- 3 medium potatoes

- 1 t garlic salt
- 1/8 c parmesan cheese, grated
