Chipotle Honey BBQ Ribs for a Slow Cooked #SundaySupper

WOW!  The first #SundaySupper of 2014!!  I can't believe just a few short months ago, I first started participating with this excellent movement.  I have met some wonderful bloggers and had some amazing opportunities.  Maybe this year I'll make it to the Food and Wine Conference so I can MEET some of these fabulous peeps.  *crosses fingers*

That's just one goal of 2014.  Now, I'm not one to make resolutions.  I think if you're going to change something about yourself or your life, you should do it when you think about it and not wait until the first of the year to make the change.  Less than 50% of the population make resolutions.  Success rate?  8%.  Yup.  EIGHT PERCENT.  Because most of those resolutions are unrealistic and there's too many of them to concentrate on.  So, you want to succeed at your resolutions?  Make one.  Or two.  Make them REALISTIC!  Actual GOALS you can achieve.



So, while I don't set resolutions, I do have goals for 2014.  Some people call it a bucket list.  That's too much pressure for me.  I'll stress having a list of things to complete.  I'm a finisher.  I don't like to leave things unfinished and will stress until it's done.  I have goals.  There aren't many of them, but they are rather large ones to tackle.

Goal number one - Make more delicious food like this!!  How tasty does that look??  Let me tell you, it was YUMMY!!


Goal number two - Buy a house.  Yup.  That's a HUGE one.  Thankfully, Dad has given us some financial support in that area.  He has gifted us a decent down payment.  We have added our own funds and will continue to do so until it's go time, but he did help out ENORMOUSLY in that respect.




Heh.  S likes to sneak shots like this in my phone.  This is Missy's dinner that night.  That's Blue Buffalo kibble with air dried peppers and carrots.  She eats healthy just like we do.  She gets oranges and dried apples for snacks.  She also gets anything and everything joint health related.


Goal number three - fix my feet and knees.  They just SUCK!  Seriously.  It's not easy to exercise because my feet hurt after about 45 minutes.  And my knees?  Just painful.  It's not that I don't like to exercise; it just hurts to do it.  And has most my life.  Personally, that's bigger than buying a house.  But I won't bore you with my health issues.


Granted, pork ribs aren't the healthiest of meat, but MAN are they tasty!  Especially this recipe.  The chipotle peppers did the tango with the honey and spices and the result was this fantastic, sweet, spice, melt in your mouth slow cooker meal.  The peppers and onions were making the music these ribs danced to.  Yup.  This meal is music in your mouth.

Seriously.  Just LOOK at that sweet, succulent, tender meat.  The green beans in the background are just a hint of healthy eating that makes it all worth while.  And the corn pudding?  It has some chipotle and some cheddar in.  The perfect sweet and spicy compliment to these tasty ribs.

Chipotle Honey BBQ Ribs

Ingredients

  • 2 whole chipotles in adobo, minced
  • 2 tablespoons chipotle sauce
  • 1/2 cup honey
  • 1/3 cup brown sugar
  • 1 cup ketchup
  • 1 tablespoon ground mustard
  • 1 tablespoon  Worcestershire
  • 2 teaspoons smoked paprika
  • 1 teaspoon celery seed
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon instant smoke
  • 1 cup onions, thinly sliced
  • 1 cup green bell pepper, thinly sliced
  • 1 pounds pork ribs, trimmed
Cooking Directions
  1. Combine first 11 ingredients in a small mixing bowl.
  2. Arrange onions and peppers in the liner of a slow cooker coated with cooking spray.
  3. Place ribs on top of peppers and onions and pour 2/3 of the sauce over top.
  4. Cook on low 8 to 10 hours or until the meat is tender and falls off the bone.  
  5. Serve topped with remaining sauce.
