The Weekly Recap...and pantry cleaning update

In my effort to try to step up my blog posts, I thought I would try to start a weekly recap.  *shrugs*  Hopefully I can keep this up.  If not, I'll be like one of those hundreds of blogs that just fall off the radar due to life.  This blog isn't a monetary thing for me...it's - I don't know what it is.  A catalyst to make me be more creative in the kitchen as opposed to simply following recipes?  Yeah, that sounds good!  LOL


Ah yes...hamburgers at Agadon, bandeja paisa (OMG too much food), beer at Bogota Beer Company, S's piccata, guajillo beef, stir fry beef, and chipotle barbecue chicken.  Not too shabby for a week.  I'm going to revisit the guajillo beef recipe at some point.  It's just not quite right and I have a few ideas to alter it a bit.  We'll see how that goes. There's also that shrimp recipe from Central that I want to make.  That was FABULOUS!  And the arepas. Mine didn't work out so good.  I thought the dough was a bit weird though.  Just have to find the right one.

It seems like forever ago that I left Colombia.  This week, three of the people I worked with there were here for a meeting.  I wonder when A will be sending me back.  I'm sure it's going to be soon and that's fine with me.  It's like meeting extended family.  Maybe it won't rain so much next time.  I have to say though, I'm a bit tired of staring at the same Excel workbook for three weeks straight.  Hopefully, but the end of next week it will be done for now.  Then it's on to the FY 14 budgetary items and trying to adjust those figures.  It's never ending.

I will say, at my mid-year review that I received GLOWING praises from L.  I really stepped up and took this project and traveling on like a true pro.  Both her and A were very impressed with my professionalism, patience, and level of professionalism that I showed while there.  I told her I truly enjoyed traveling and working with the people at the embassy.

I made some yummy dishes.  I made some new friends.  I found some new blogs (My San Francisco KitchenAttainable CuisineFlorassippi Girl).  My blog roll is hideously large and full of enablers.  I LOVE YOU ALL!  AND I cleaned a few things out of my pantry and freezer for the impending move.  Which, I have to say, won't be as bad as S had me believe.  It'll be a little cramped, but not unlivable.

I was SUPPOSED to go through some boxes this weekend, but here I sit...blogging...tweeting...giving S the blogger bug...Oh well.  There's always next weekend!

Sunday – Cornflake Crusted African Spiced Pork Chops (new recipe…stay tuned)
Monday – Cassoulet (cannelini beans x 2, canned tomatoes, smoked sausage)
Tuesday – Shrimp Caesar
Wednesday – Tuna Romanoff (pimentos, cream of mushroom soup, tuna, egg noodles)
Thursday – Chicken Meatball Sammies
Saturday –  Lasagna (noodles, hamburger)

I’m in the process of making Peanut Butter Chocolate Chip Cookie Dough Bites and will concoct some blueberry lemon scones, I think.  Or maybe muffins?  Don’t know yet.  I’ll decide tomorrow, as I will probably take them to work whatever I make.  I’m also thinking gingerbread mocha cupcakes?  That would be interesting….I have crystallized ginger in the pantry, too.  Hm....

Tonight is Enchilada Casserole my way of course.  I'm in the process of simmering the sauce for the meat right now.  I'll let ya know how it turns out.

So, the cookie dough bites are interesting.  They're really not cookie like at all.  They're more pasty than anything?  I can kind of taste the peanut butter, but the dark chocolate chips I used up from my pantry, I think, overpowered them.  I won't be making those again.  That's for sure.  They just sounded interesting and figured I'd try them once.
