And now...back to reality.

We're moving.  Again.  When we took this apartment, we had a roommate.  NEVER AGAIN!  It was HORRID!  So now, they're raising our rent.  AGAIN!  Yes, I know they're supposed to raise it but it's like $80-$90 more than it was last year!  And we can't lock into more than 1 year at a time.  Does that mean it's going to go up that much each year?  This is the most irritating.  I'd like 2-3 year lease?  But you can't find that anywhere here.

So, we're moving.  Again.  To a smaller apartment.  This means it's clean the pantry and freezer time!  Yippy skippy!  I hope to use quite a bit of the pantry this month.  Granted, I'm going to be making this:


The guajillo pepper braised beef.  I have a roast and not short ribs.  I did find the peppers at Grand Mart.  Thank Macy for Grand Mart.  I hit three stores on Saturday trying to find them.  NADA!  LOL  And I was even more excited to find a smaller bag of dried ancho chiles.  I DID NOT want to purchase a huge bag of them from WalMart.  I found a bag at Grand Mart that has like 8 of them in it.  I can't wait!  I also bought stuff to make some arepas to go with the beef.  This should be fun!  I am going to this recipe here and this recipe here to sort of recreate what I had.  I think it has some of this in it, too, so I purchased tomatoes and onions to make the hogoa that I think is going to be the basis for the sauce to braise the beef in.  We'll see how it turns out.

So, at some point, I'm going to take inventory of what's in the pantry  AND what's in the freezer AND what's in the baking cabinet.  I need to clear that out, too.  If that means I make cookies to send to work every week, then so be it!  I think that will be the biggest hurdle....my baking stuff.  I seem to be a hoarder when it comes to baking products: chips, nuts, jimmies, sprinkles, etc.  We'll see how that goes.

Tonight's dinner was Chicken Piccata.  This cleared out some of the angel hair pasta that's in there.  Now there's half a box left.  This week's menu:

Chicken Piccata recipe that S sort of uses is here.  But we always modify it based on what we have and what we feel like making.  Tonight, he thickened the sauce making a slurry out of the white wine and lemon juice with about 1 tablespoon of flour.  It worked out perfectly.  He makes the best piccata.

Enchilada Casserole

I have had the fixen's for Enchilada Casserole for a few weeks now.  I need to finish up the rest of those corn tortillas that I have in the fridge.  Those buggers come in a 200 count and take FOREVAH to use up.  I just don't cook enough with them and can't find a smaller package at WalMart.

I have the ingredients to make these chocolate chip cookies.  I will probably make those tomorrow.  I am curious to see how the garbanzo beans will taste in the cookies.  Should be an interesting experiment.  I purchased the Jif Natural Honey peanut butter again.  That stuff is good!  I hope they turn out okay.  If not, lesson learned.  Well, I should chill with S.  We're watching all the shows that taped while I was in Bogota.  Man...that's a lot of shows.  LOL
