S's Garlic Mushroom Marinara for our #MeatlessMonday Meal

This week was S's menu, for the most part.  I threw a few things in there, but he pretty much made the menu up.  A few of the things he made I've posted before.  We had Hot Hamburger, and he calls it Polish Dinner, but I call it Braised Sausage and Kraut.  Actually, it's this recipe minus the beer.

He decided to make something simple and quick for our #MeatlessMonday meal this week.  He said marinara.  Then it morphed into mushroom and garlic marinara.

When S and I met, I had one deal breaking prerequisite.  MUST LOVE TO COOK!  Seriously.  My ex...wow.  I have no idea how in the world...well yes I do and I won't go there.  But seriously he couldn't even boil water for mashed potatoes or pasta.  It was sad.  Being as cooking is such a LARGE part of who I am as a person, I needed someone to share that with me.

S was just that person.  When I first visited him, he was a bachelor.  He had almost the typical bachelor kitchen with one exception.  His knives.  They were Henckels.  I had Henckels.  Um....k.  Okay.  There's something here.

He at least has some good knives.  And well, he does know how to cook.  He would cook for me while I was there.  So, even though he didn't really have bowls and spatulas (the rubber kind) and baking pans, he at least had the skills to use those things once he got some.

Granted he's not much of a baker, but that's where I come in. 

You have to appreciate how difficult it was to make chocolate chip cookies in a cleaned out Cool-Whip tub, a fork, a wooden spoon, and various re-appropriated kitchen tools.  Yup.  They weren't the best cookies I made, but they tasted good.  Heh.  The next time I visited, I brought almost my kitchen, but I'm sure I've told y'all this story before.  Sorry to bore ya if I have.

Anyway, today we have married out knife sets.  He's still a awesome cook.  We have many new kitchen gadgets and I couldn't want for anything.  With him by my side, it doesn't matter what tools we have or don't have.  I know, we will make something amazing.

S's Garlic Mushroom Marinara

Ingredients
  • 3 cups mushrooms, sliced
  • 2 tablespoons garlic, minced
  • 28 ounces tomato basil spaghetti sauce
  • 8 ounces angel hair pasta, cooked
Cooking Directions
  1. Heat a large skillet coated with cooking spray over medium-high heat. Saute mushrooms and garlic until tender and juices have released.
  2. Add spaghetti sauce and simmer 5 to 10 minutes.
  3. Serve with hot, cooked pasta and crusty garlic bread.
