Spicy Beef and Bell Pepper Stir-Fry
COOKING LIGHT, JUNE 2010
Just made this for dinner. I was shopping at WalMart and they had some stir-fry beef on mark down. It was quick. Which is always a plus for a weeknight dinner...especially after the day I had! UGH!
I cut the strips into smaller pieces for it to cook faster. As usual, I didn't REALLY follow all the directions. I sauteed the beef and then removed them from the pan. Then I added the bell peppers and cooked them for about 4 minutes. Then The sauce went in until it thickened. I added the beef back in and let it simmer for a few minutes more.
It was quick and good. I think I'd want more of the chili sauce. I expected it to be a little spicier, but it wasn't. Not that it wasn't good, but I thought it would be spicier. I might use the sriracha sauce instead of the Thai chili garlic sauce I used. Maybe I'll add more garlic next time.
There's another package of beef in the freezer. I just might whip this recipe up again.
