Cheesy Pasta Bake

Ours didn't quite look like this. LOL Holy huge amount of food for two people. S says to me, "That's a lot. Maybe we should half the recipe." "You're right...that is a lot of food." *forgets entire conversation and dumps whole box of pasta in the pot to boil. Okay, so, who in the world makes a recipe with 14 oz of uncooked pasta when there's a pound in the box? Who would honestly leave that extra 2oz in the box for a later use? Not me, that's for sure.
For years I've always omitted the red/white wine in all recipes. I have since found out that I really like red wine with pasta sauce. The Chicken Cacciatore recipe I have on here had been made for a few years without the red wine. We just usually didn't have any laying around. Well, one day we did and O.M.G. I will not leave that part out of the recipe again! The depth of flavor it really adds is just yummy! So, if you're like me and usually omit it, try it once and see if you'll agree.
Oh yeah...rating this recipe. I bought the sweet Italian sausage (Shady Brook cause that's all they seem to sell around these parts.) You could make it with either. I bought some ground turkey brand at WalMart that I've never seen before. I always have little hopes of ground poultry. It just doesn't crumble right. Well, whatever this stuff was, crumbled very well! I was surprised! I usually have to chop the Shady Brook stuff when I use it. I'll have to find that brand again. *Note to self, dig label out of trash*
I used a standard Ragu marinara sauce. They're cheap and rather tasty. I just used one jar. 5 cups seems like an awful lot of sauce for the ingredients. Maybe I like my noodles a little dryer than most, but I wasn't about to use the other jar. It would have made the casserole dish overflow!! And not sure why the slices on top, but it worked. It was YUMMY! I think we forgot the crushed red pepper, but that's okay. I was a bit scatterbrained tonight when it came time to cook dinner... This will probably be on the menu again. I'm not quite sure it's weeknight friendly, but it's definitely something to assemble on a weekend and bake later on in the week.
