I get ambitious when I have an unplanned day off. Today, it was vaccuum, make these banana bread scones into biscotti, clean some bathrooms, make some dog biscuits, and I think that's about it. Yeah, it's not a HUGE list nor is it an exhausting one. It's just this impending Frankenstorm and not knowing how this apartment will hold up under the wind gusts this area is scheduled to get that has exhausted me.
And now I have tomorrow off as well. I'm going to bake myself into oblivion before this thing passes over and I can go to work. I have yeast! Don't make me use it!!
The game plan: Slice the banana bread scones into biscotti type slices and bake. Mind you, I've never made biscotti before. So, I truly had no idea how to make them. AND I was lazy and didn't search for a recipe to give me an idea as to how to bake biscotti. I just sliced them, put them on a silpat coated pan and baked at 250. I think it was 2.5 hours? I'm not quite sure. I really should have timed it.
I started to smell them (those who are bakers will know what I mean) and so I checked on them. The top side was nice and dry, but flipped them over and well that side wasn't. So, I flipped them over after about an hour. Repeated this again after another hour and took them out about 30 minutes later.
As you can see, they did brown. More than I thought they would have. The banana flavor intensified, they're crunchy and could easily chip a tooth, and taste like banana crack. I, of course, had to
I allowed them to completely cool and then put them in a ziplock baggie...to take to work...should this stupid Frankstorm ever end. *sigh*
